500ml apple juice

500ml pineapple juice

8grams cajun spice

300ml white wine vinegar

100ml hot sauce

500grams golden syrup

500 gram dark soft brown sugar

20 grams garlic puree

25ml gin

  1. ​Add all ingredients to large pan.

  2. Bring to boil and reduce until syrup like temp of 117c must be achieved.

  3. Remove from heat, allow to cool below 8c
